The special feature of this knife is that it has a sage leaf on the spring of the knife.
Sage is a country plant. It is attributed many medicinal properties, as well antiseptic, calming as digestive.
The other particularity of the Sauveterre knife is that it has a fairly thick straight handle.
It is stockier than the Laguiole, but finer than the Thiers.
